One of my favorite snacks is guacamole, and while avocados are filled with one of the “good fats,” or monounsaturated fat, sometimes I want a lighter option. This lightened up guacamole recipe has the same great taste and creaminess of regular guacamole with less fat and more fiber. Pair it with veggies for dipping for an even lighter option.
1 avocado, halved and pitted
1 can cannellini beans, drained and rinsed
1/2 poblano pepper, seeded, roughly chopped
1/4 C red onion, chopped
Juice from 1/2 lime
1/2 C fresh cilantro, loosely packed
2 plum tomatoes, seeds and juice removed, roughly chopped
1/4 tsp salt
1/4 tsp cumin
2 cloves garlic, smashed
Pour the beans in a food processor and pulse for a few seconds. Put everything else in the food processor and pulse to desired texture.
