I have a small infatuation with peanut butter. Sure, it’s fine in moderation, but I more than “moderately” like it. Lately, I have been trying to come up with way to “stretch” my peanut butter so it seems like I am eating more of it than I really am. (Wow, it didn’t sound crazy until I just typed it out! haha Oh well.) I combined two of my favorite things- pumpkin and peanut butter- to make one awesome dip. The pumpkin pie spice also makes it feel kind of fancy.
This delicious dip is SO rock star! Are you ready for this? Serve it with an apple and it has 1 1/2 servings of vegetables, a serving of fruit, healthy fats, 10 grams of protein, and 14 grams of fiber. It really does fill you up and keep you full for a long time!
