Mexican Dorito Casserole

  • Ok, so this recipe isn’t going under the “Healthy Kitchen” tab, but I’m fine with that! It’s cheesy. It’s crunchy. It’s salty. It’s GOOD!

    Mexican Dorito Casserole
    Nothing “pretty” about this, just a yummy, comfort-food casserole!
    I got this recipe from my mother-in-law a few years ago and have only made this a few times. It’s SO easy to put together and it doesn’t take very long to make either. Here’s what you need.
    Mexican Dorito Casserole
    adapted from Momma Hann
         serves 6- 8
    1 – 1.5 lb lean hamburger
    1 can cream of chicken soup (I used 98% fat free)
    1 can spicy chili beans
    1 can diced Rotel, drained (I used mild with green chilies)
    1 package Spicy Nacho Doritos
    1-2 C shredded cheddar cheese (I used reduced-fat)
    Preheat oven to 350 degrees. Brown meat in large skillet. Once meat is cooked, add soup, beans and Rotel and stir. Crush about 3/4 of the Doritos and place them in the bottom of a 9X13 baking dish. Pour the meat mixture on top of chips.
    Add the rest of the crushed chips to top, and top with cheese.
    Bake for 15-20 minutes. The sides will be bubbly.
    Let cool slightly and serve.
