Funfetti Cake Batter Cookies

    Funfetti Cake Batter Cookies
    Sometimes things get crazy when I remember I have a sprinkle stash.
    Do you remember what this picture was from?
    That’s right. It was from my Funfetti Blondie Bites. Oh dear. I think someone should make vitamins that look and taste like sprinkles. Eh? Million dollar idea??

    Funfetti Cake Batter Cookies
      makes 30-32
    1 box vanilla cake mix, 18.25 oz
    1 tsp baking powder
    2 eggs
    1/2 C vegetable oil
    1/2 tsp vanilla extract
    1 C color sprinkles

    Preheat oven to 350°. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet or silpat.

    Bake for 10 minutes. Allow to cool for 5 minutes on cookie sheet before transferring to cooling rack. They will be very soft at first.
    Cool and enjoy!

    You may have noticed that I didn’t use an actual Funfetti cake box mix. I did that for two reasons. One, I have seen pictures of those and they kind of lack pizzaz if you ask me. I wanted WAY more sprinkles in mine. Secondly, I wanted to see how the sprinkles turned out in the batter. I think these would make great game day cookies. Just use your school colors (ahem, orange and black!) and bring on the cheers!

    Look! Even the underneath side is pretty. :)
    These would be fun for a kids party or a baby shower. You could also use pretty red and pink sprinkles and make them for Valentine’s Day!

      I was out of white cake mix and noticed that I did have funfetti cake mix. So…. after some thought, I used that AND the cup of sprinkles!       Made these today for my son’s birthday treat at school and the kids loved them. We topped each with a squirt of canned whipped cream (my son’s favorite thing) and that sent them over the moon! The cookies are so easy to make, they are yummy and so fun. Next time, I might dip an edge or bottom in melted chocolate or drizzle some on top to take it up a notch.

        Amanda, I’m sure 1/2 a cup would still be great. You could always start with 1/2 and then if it looked like you needed more you could always add a little more.

      These look amazing. My son is have a puppy themed birthday party and I was thinking about using a cookie cutter to make these in the shape of bones. I’m worried they will loose the shape when they bake. Any ideas? Maybe make in a bar pan and cut when cool?

      We already have that :) It’s called Pikovit, and you’ve probably guessed it, it’s for kids :) 5-7 y of age! I can still taste them…but they werent all sugary, more fruity :)

      I made these today with a few variations – devil’s food cake mix, mini chocolate chips instead of sprinkles, and a few pinches of instant espresso powder, cinnamon, and chili powder to taste…I’m going to call them Mexican Chocolate cookies, because they taste like Mexican Hot Chocolate!!       I am going to try your recipe tomorrow. However, I was just wondering the only vanilla cake box I could find in the store was a french vanilla cake mix and it was slightly smaller than the recipe calls for (15.25 oz). Will this taste the same?? Or should I switch up the measurements? Thanks!

        Julie, I haven’t tried it with a smaller box mix however a few people said it works well. I would probably do one of teo things. I would either use a little less oil or add a little flour. I hope this helps!!

      I found several recipes on Pintrest for cake batter cookies, but yours had the simplest ingredients and looked the best so my boyfriend and I went and picked up vanilla cake mix, sprinkles, and unsweetened applesauce to replace the oil in the recipe. I also only found the 15.25oz vanilla cake mix, but I added a little flour and they turned out great! My boyfriend and I both enjoyed them a lot! Thanks for sharing! :)

        Hey there! Ok, here’s what I would do. The cookies spread out a lot when they are baking SO I would bake them in circles first, then use a cookie cutter to cut the desired shape AFTER they have cooled completely. I know that doesn’t sound like as much fun, but trust me, they will NOT hold their shape if you use a cookie cutter prior to baking. Hope this helps! :)

      I just wanted to say thanks for sharing this recipe. I found it on Pinterest and have made them several times since. My daughter loves the “sprinkle cookies.” Today we made them Christmasy by adding red food coloring to the dough and using green jimmies with white snowflake sprinkles. They turned out so cute.         i did the math and it came out to about 1/3 of a cup of extra flour! i did that and the cookies came out beautifully! so nice and fluffy! will definitely make again!! :) thanks.

        Hey there! I would not make these more than two days in advance. So, Friday at the earliest. They are kind of crispy on the outside and soft in the middle and you don’t want them to get too hard. :) Let me know how they turn out!

      These are my absolute favorite cookies! I change up the recipe somewhat by mixing and matching the cake mix flavor with different extract flavors. Some favorites have been Chocolate cake with peppermint extract, Lemon cake and lemon extract, carrot cake with vanilla extract, strawberry cake with almond and vanilla cake with 1/2 vanilla and 1/2 orange extract – creamsicle! YUM!! Thank you for this recipe, my Youth group LOVES these cookies!

      Im slightly confused about the mixing of cake batter & baking powder…do I prepare the cake mix as it says on the box & then add the extra eggs (muxed with oil & vanilla) also?? Or is it dry cake mix with baking powder & the egg mix added to that??

        Kristen, great question! You do not follow the box instructions. The cake mix is just one of the ingredients. So, just mix the cake mix with the baking powder, then add the wet ingredients to that. :) Hope you like them!! -Cookin’ Cowgirl
