“How The Grinch Crinkled Christmas” Cookies

    “How The Grinch Crinkled Christmas” Cookies
    I have made several versions of cookies using cake batter mixes, and that’s what these cookies are too. I used a Duncan Hines French vanilla cake mix, so I guess you could say the flavor of these cookies is vanilla. Cake batter cookies, if cooked properly, are so chewy and delicious. Also, they are not too sweet, so the powdered sugar gives them a nice sweet boost.
    “How The Grinch Crinkled Christmas” Cookies
           makes about 36
    1 18.25oz box French vanilla cake mix
    6 T butter
    2 eggs
    Green food coloring (I used 60 drops)
    1 C powdered sugar
    1 t corn starch
    Preheat the oven to 375°. Melt the butter and set aside to cool. In a shallow dish, mix together the powdered sugar and cornstarch with a fork.  In a large bowl, mix together the cooled butter, cake mix and eggs. This will be a little hard to stir together. Add the green food coloring and make sure it is all mixed in.

    Take two spoons and drop a blob of dough in the powdered sugar like this.

    Move it around with spoon until it is mostly covered in powdered sugar. Then, once it is already covered, roll it into a ball and place it on a cookie sheet.

    Make sure you don’t over crowd the baking sheet because these cookies spread out.
    Each oven is different, but I bake these for 9 minutes. (They won’t look done but they are.) They will look slightly puffed up, like this.

    Take them out of the oven and cool for one minute. Then move onto a cooling rack. They will drop a little, but will still be nice and chewy.

    Everyone know why The Grinch was so grinchy. Because his heart was two sizes too small! But now instead of termites in his smile, he will have cookies!

    These cookies would be fun to take to a cookie swap or holiday party. And let the kids help roll out the cookies! I hope everyone has been enjoying my Christmas goodies, because I sure have enjoyed making them! xoxo

      This recipe gave me terrible fits. I could not get the right shade of green, and the cookies constantly kept turning out to be either a little brown or underdone. They’re so pretty here. :(

        I had so much trouble with them getting brown on top and not being done inside even at 7 or 8 minutes. The ones that came out, just didn’t taste very good. I don’t think I’ll be making any cake batter cookies any time soon…I was disappointed because they are so cute for St. Patty’s Day.

      I made these for St. Patrick’s day, following the recipe as written, and they were wonderful! I used Wilton colors and scooped them onto parchment paper with a Pampered Chef 1 TBSP scooper, and they tasted and looked great, and they were all quite uniform (thank you scooper)! I liked them so much that I decided to make your Funfetti Cake Batter cookies the following week, and they were fantastic. Egg-shaped rice krispie treats are next, and I found a box of strawberry-flavored rice krispies to use. Yum!
