Whether you serve ham, turkey or steaks for Easter, I wanted to put together a list of great side dishes and desserts to go along with the traditional dishes that your family normally has. Give a few of these a try and let me know what you think.
Scalloped Potatoes Au Gratin with Gruyere– This classic side dish is pretty self explanatory….except this one has three kinds of cheese. Yum!
White Eggplant Ratatouille– If you like eggplant, you’ve got to try this beautiful dish! If you can’t fine white eggplant, purple would work just as well. It comes together quickly and it’s beautiful to entertain with.
Parmesan Roasted Cauliflower – This low carb dish is a great replacement for traditionally heavier potato side dishes. Also, with not much cheese, this lower calorie dish still has a wonderful flavor!
Seven Layer Salad– This is my grandma’s recipe for the classic seven layer salad (also known as Governor’s salad), and this dish was at several holiday gatherings when I was growing up. You won’t want to miss the crisp bacon topping over this colorful, classic.
Cauliflower Gruyere Gratin– Now THIS lower calorie version of traditional potato gratin is not missing anything. It’s rich and creamy and you won’t even miss the potatoes with all the delicious gruyere in here!
