  • I know I’ve said this, like a THOUSAND times, but brunch is my favorite meal. It includes breakfast. And lunch. And who doesn’t love breakfast for dinner? So basically I love all three meals. Equally. But most of all brunch.

    Now before you go gettin’ all judgy on me, this recipe is actually pretty healthy.

    Uh, you see that beautiful bacon above don’t you? Dang. Thought that might have slipped your eye.

    Brunch bagels with Sausage, Egg and Bacon

    No really. I used whole wheat bagels, TURKEY sausage and reduced fat bacon. See? Healthy. wink wink

    Breakfast bagels with turkey sausage and eggs

    I like to cook my bacon in the oven so that it doesn’t leave a huge mess for me to clean up. The other lovely thing about doing this is that you are already going to have 2 skillets going, one for your sausage and one for your eggs, so this is one less thing you have to baby sit.

    Sausage, Egg and Bacon Mini Breakfast Bagels


    • 12 oz ground breakfast turkey sausage
    • 6 oz reduced fat bacon
    • 6 eggs
    • 1/4 C milk {I used fat free, but any will work}
    • Salt and pepper
    • 6 whole wheat mini bagels {12 halves total}
    • Butter
    • Cheddar cheese


    1. Preheat oven to 400 degrees. Line a baking sheet with foil and place a wire rack on top. Lay strips of bacon on rack and bake for 15 to 20 minutes, or until bacon is cooked and crispy. Remove bacon from baking sheet and let cool on paper towel lined plate.
    2. Turn oven to broil.
    3. In a medium skillet, brown turkey sausage. If you are using pork, drain off fat now. Set aside.
    4. Meanwhile, in a bowl, whisk eggs, milk and salt and pepper together. Pour into a skillet and cook. Scramble eggs until cooked through. Set skillet aside.
    5. Lightly butter the bagels and place cut side up on baking sheet. Place under broiler for a few minutes, just until the tops are lightly browned.
    6. While the bagels are browning, chop cooled bacon into small pieces.
    7. Remove bagels from oven. Top with egg, a layer of shredded cheese, sausage, bacon, and finally more cheese. Place baking sheet back in the oven until cheese has melted and everything is warmed through.
    8. For leftovers, reheat in oven at 350 until warmed through.

    These are fun to serve for dinner or when having company. I took these out of the oven and Tinsley said, “Pizza. WANT!”

    So yeah, I guess they are kind of like pizza bagels. Breakfast pizza bagels.
